Grilled Salmon With
Pink Peppercorn Sauce
Ingredients:
4 salmon fillets
1 tbsp. (15 ml) olive oil
Salt & pepper; to season
¾ cup (165 ml) crème fraiche
¼ cup (65 ml) milk
Dill; chopped
3 tbsp. (45 ml) pink peppercorns
1 tbsp. (15 ml) creamed horseradish (optional)
1 tsp. (15 ml) honey
Pinch of salt
Method:
1. Preheat oven to 180°C.
2. Brush the fish with olive oil and season.
3. Roast for 10 min. until cooked but still moist.
4. Blend together the crème fraiche, milk, dill, half the peppercorns, horseradish (if using), honey and salt.
5. Serve the fish with a good scoop of the sauce and decorate with extra pink peppercorns.
